I Maybe it's zeitgeist, or maybe it was just a CNN story, but we all got really interested in liquid nitrogen ice cream. We checked some stuff on line, and got ready to give it a try. We don't have permits or licenses, so we're not allowed to have liquid nitrogen, but luckily, being a freedom fighter, I have connections that can get me around the anti-liquid-air- man, so I made the right calls and we had a couple dewers with several liters of very cold stuff at the Slammer. A bunch of us got together, and put the half and half, sugar, and vanilla in a big metal bowl. We were making about a gallon. That was it, we mixed it all together. Everyone was very afraid of the liquid nitrogen, except me and Nate, so we dove in. We put on big gloves. I had a whisk and Nate had the dewer. It's amazing. He poured the LN directly into the bowl with the food and I stirred. It was just a B-movie lab with all the smoke pouring out of the bowl and onto the floor. I couldn't see what I was stirring, and even through the gloves it was cold, but Nate kept pouring and I kept stirring. It was amazing.

In just a matter of a few minutes, it got too hard to stir. That was it. The LN was in with the stuff, froze it, and evaporated. Crystals in ice cream are what make it grainy, but with the LN, it freezes so quickly, that there are really no crystals. It's the smoothest ice cream I've ever had. We didn't even serve it into bowls, we just all ate out of the big bowl. Man, it was good. It was just perfect. If Dino and Nate can find a way to make this legal and safe to sell in malls, they'll make a zillion dollars. It's fun to watch, and it's really good to eat. After that everyone got brave, and wanted to pour and stir. We made strawberry, and chocolate, and then took some maple syrup and made some maple. That was the best. I had just had a doctor's visit and he was thrilled with my loss of 30 pounds and my blood pressure was great and he's backing off the meds and told me to eat a little more wild, so I got doctor's permission to eat ice cream and I did. I ate quite a bit and loved it.

We had a lot of LN left over, so we played with it a bit. We dumped a lot of it into the pool and that looked really cool. Man, smoke all over. The ice cream is really good and really fun. If you can get a connection to score some LN, just do it. Make yourself a batch and you'll be happy you did.

Just try not to lose an eye or get caught by the man.
